All of our products are available on our farm and many are available through Nebraska Food Cooperative.  Omaha customers can also purchase our products through Pure Harvest - a new farm to consumer delivery service in the Omaha area.

We have enjoyed being at both Village Pointe and Aksarben Farmers Markets.  Look for us to be season vendors at both next year!  As the end of farmers market season approaches we have been looking at the possibility of continuing a monthly or even bi-monthly drop at both market areas with meats and cheeses for people. Cheese

Currently we have Fresh Monterey Jack, Fresh Pepper Jack and Fresh Feta available as well as our raw milk cheeses.

Raw Milk cheeses:  English Cheddar, Aged Monterey Jack and Aged Pepper Jack.  Aged Feta available by end of September 2011.

Taste the difference sunshine and grass makes in cheese!  YUM!  You can find our cheese in our on farm store, through Nebraska Food Coop and at Village Pointe Farmers Market. 

Milk

We milk twenty-eight jersey cows that are on a grass-fed diet.  We milk year-round and utilize a rotational grazing system to insure maximum nutrition for our cows.  For a more detailed description of our Herd Health Management procedures, CLICK HERE . 

Nebraska law allows for raw milk sales on the farm only.  We are a Grade "A" licensed dairy, and as such our milk is tested monthly for safety.   For more information and pricing on our milk feel free to contact us.    If you would like to read more about about our milking procedures CLICK HERE .

Pastured Broilers

We use 10 ft. x 12 ft. x 3 ft. portable pasture shelters to house about fifty birds each and grow our birds in 12 to 15 weeks.   Our broilers are currently being cared for on leased farmland away from our homestead.  We made this decision because of our flooding here last year, we want to give things a year here to learn the trends of our creek (aka river). 


Moved twice daily to fresh pasture, these birds receive fresh air, exercise, sunshine,and all the organic soy-free local grain and fresh milk they want.   Rotational grazing of the chickens after the cows on pasture shortens the grass and encourages ingestion of short grass.  This gives the chickens the best grass nutritionally for their needs and allows them grass at the right height for them to effectively eat it. 


Unlike factory farmed chickens, our are not processed in eight weeks but rather allowed to grow slowly which produces not only a nutritionally superior meat but the flavor just cannot be beat. We process all of our poultry right here on the farm in the fresh open air.

Our hens are fed minimal grains but what they do eat is local, organically grown, and soy-free. Our hens are completely free.... eating grasses and bugs to their heart's content and feeling the fullness of their 'chicken-ness'. Every day is an egg-hunt over here!

Pastured Pork

Happy pigs that run and play all day.   


Our pigs are kept in moveable pasture paddocks. They serve the purpose of helping to aerate and till our pasture and garden areas. The mainstay of their diet is forage and they are supplemented with locally organically grown soy-free grains as well as both fresh milk from our cows and whey after I make cheese.


Pork is sold by the piece.  Most cuts are available. Because we have been unable to find a USDA  inspected processor to agree to nitrate-free curing,  we will not have any cured items available.  

All of our sausages are completely natural... free of all preservatives, no MSG, no nitrates, fillers, or artificial anything!  We grind a whole pig up into sausage so they are lean and meaty.. not fatty. They don't shrink when you cook them, in fact you might want to add some fat or water to the pan!  Our recipes are simple.. just meat and spices.. nothing more nothing less.  The only added item is a natural casing for linked and coiled sausages.

Grass-fed and Finished Lamb and Mutton

Mutton is traditionally lamb that is over 2 years old, it is a richer more flavorful meat that is gaining popularity, especially in Europe, and is now seeing more interest in the US. Mutton is in many parts of the world more common than lamb, as lamb is seasonal while mutton is year round and generally less expensive as well. We butcher at just under or at 2 years old while the meat is at the height of it's flavor but not overpowering.. we call it a "Young Mutton".

Pastured Turkeys

We absolutely LOVE raising turkeys!  We grow them seasonally every year, ready in time for the holidays.  Like all of our poultry, the turkeys are reared in portable pens and moved to fresh pasture daily.  Grass and bugs are the mainstay of our turkeys' diet.. they are supplemented with locally grown organic soy-free grains and fresh milk from our jersey cows.

Grass-Fed and Finished Beef

We are happy to offer grass-fed and finished beef.  Our beef is jersey meat.  Jerseys as a breed are very good at putting the CLA and Omega 3 properties from the grass into their milk and meat.   We butcher our beef young, well before it reaches the industry standard of two years.  While we may not get nearly as much meat off our animals.. the meat is tender and flavorful.   Generally we will butcher our bull calves around 12 months of age.  Often, the animal is still drinking milk... this makes for fabulous tender beef!

Pasture Raised Veal

We have just begun to offer a very limited amount of Pasture Raised Veal.  Calves are at weaning age (6 to 9 months old).  Traditionally male dairy calves go to auction days after birth and are usually sold to veal growers or are just left to die.  They are doomed to live the entirety of their life in a small crate, often only 2 feet in diameter, unable to move or turn around.  This is what gets that milky white meat with that traditional buttery-like fork tenderness. 
  
Without enough room to grow all of our male calves to maturity, pasture raised veal is one way we can keep our numbers manageable and offer folks an alternative to inhumane veal.   The meat is rosy in color and tender.  Pictured are 2 T-bones.
